Anyone recommend a nice pepper sauce.

Col: Just seen this.

My first instinct upon reading your post was to add more peppercorns to your sauce - try green ones. If they are in brine rinse them first. Pink are more subtle and a wee faddish.

It might help more if I knew what you were doing and how you were serving it.

A Steak Au Poivre for example can be more peppery with more crushed black peppercorns, freshly whizzed up in a spice mill or pounded wrapped in a tea cloth.

Another idea to lighten the cream taste is to use Crème fraîche in it's place.

I had a Steak Au Poivre made with Crème fraîche in an office workers bistro off the Champs-Elysees back when Gordon Strachan was at his best for Scotland. I was on holiday from the States at the time. The idea was new to me and I can't really say I preferred the sourness. It's a matter of personal taste - and sometimes health.

If anyone requires gluten free food then my suggestion among the big Supermarkets is to try a decent size Tescos. My fiancé has been advised that gluten free food may help her with her Crohns. She's looked around the multiples in the Bangor/Caernarfon area and Tescos have by far the best selection on offer. There is no Sainsbury in that area though (so they are not included).

I'm not a fan of creamy sauces.

I made quite a tasty pepper sauce the last time we had steak, just with
Oxo, onions, flour, milk, and ground peppercorns.

I'll probably do much the same.

Freshly coarse ground the black pepper - this gives a bigger spice hit than finely ground - and embed into the steaks. Follow your recipe from there. Let me know if that helps you get a more peppery kick.

The Crème fraîche may work for you, but test it on something not so important as your Xmas meal.

Am nowhere as genned up or as skilful as you guys in the kitchen but i will certainly be trying a few of these dishes for get togethers, loved the chilli page aint read past that yet was dribbling 8):

My wife was making our traditional Friday tuna and pasta this evening. I heard an cry of dismay from the kitchen - she was putting it on the plate and realised she'd forgotten to put the tuna in :lol

Russ when i first got married i bought one of these microwave fingys {:)

Me being me went head long into it never read the instructions i put a chicken in it for gawd knows how long it came out the size of a thrush :clap :clap

Tomorrow we'd welcome the New Year with a dish originally planned for Xmas.

'Roast Duck with Apples and Five Spice Powder' (number two on the list here http://www.guardian.co.uk/lifeandstyle/ ... gel-slater).

I'm going shopping shortly here in Caernarfon. Bramley apple seems my best availability bet. Duck stock? I doubt it! :) so Cider will seem to be the liquid of necessity- no bad thing with all the lovey ciders coming from Southwest England.

I'm using a Gressingham whole duck which is a tenner in most leading supermarkets.

Roast tatties (using the fat from the duck) and Green beans with garlic round the dish off.

(Being a Scot bringing in the New Year in Le Pays de Galles I would have loved to have had Roast Welsh Black Beef tomorrow, but my other half bought the duck yesterday. 'Quackers' got pushed off the supermarket shelves in the lead up to Xmas due to the demand for Turkey.)

I've settled on Braeburn apples and a Welsh med-dry cider called 'Black Dragon'. Possibly the combo is a wee too sweet for me, but we're having a 'brut' champagne in the morning, so all evens. :) I have considered using the champagne in cooking the duck, but it's £10 v's £1.99 - so cider it is.

It's easy to make your own Chilli spice pack. I used these simple ratios for years when I cooked professionally.

Equal parts chilli powder, ground cumin, ground garlic powder, ground onion powder. Half part ground cayenne pepper.

Don't substitute onion salt for onion powder. :)

If you have trouble getting onion powder in certain parts of the UK (it is a more US item) then add more raw onions to the recipe.

The standard Schwartz chilli, I find too mild. The Hot one works for me though.

What would you class your spice mix as.

I'm betting in the case of the mild one that they are using regular Chilli Powder. You can get Hot Chilli Powder too.

Mine is spicy without making your eyes water. You can top up the cayenne if you want.

Of course Col get yourself to one of the Asian shops for the spices...they'd always be considerably cheaper than supermarkets. The spices do lend themselves to 'Indian' cooking too.
